Arti’s Paleo Pancakes

I have been making pancakes for about 50 years, the refinement process is such that the taste, texture and visual appeal is one of a special and personal experience as I call it, “The Art of Pancakes”. Many different ingredients, such as wheat flour, oats and corn and many different outcomes, still there was one more challenge, the gluten free and dairy free panny!

Ha you say, what will come of this misadventure, I turn in victory after many failed lumps of crumbled masses, “The Paleo Pancake”, the only difference is that it actually tasted better!!

Arti’s Paleo Pancakes

Here are the ingredients:

2 cups                 Tapioca Flour(organic)
1/2 cup               Almond meal
1/4 cup               Coconut Flour
1/4 teaspoon       Xanthan Gum
1/4 teaspoon       Himalayan salt
2                         Eggs(free range)
400ml           Water (bottled, no chlorine or fluoride),  this quantity is approximate, it depends on the quality of your ingredients.
10 teaspoons       Coconut Oil(organic – white , solid at room temperature)

Procedure:

mix all the dry ingredients together
Add water and eggs
mix until smooth, no lumps
add one teaspoon of the solidified coconut oil in the pan let it melt so it is clear before each pancake
the batter will tend to droop into small islands so pour carefully from the ladle in one smooth zig-zag action.
cook until top of batter starts to solidify, then turn over until golden.
This mix should make about 10 medium size pancakes.
